Would using offset irons (Tommy Armour 845u) possibly contribute to hooking long (3 thru 6) irons. Would using regular flex shafts cause a "lag" in the club head & help keep the toe back as opposed to my stiff flex shafts and maybe stop hooking so much?

Offset irons are marketed mainly to slicers. The idea is that they give you more time to get the clubface to the ball and allow the club to "square up." Personnally, I've never been a huge fan of the big offests. But you are playing clubs that aid slicers, not hookers. So, yes, your problems are probably worse because of your equipment. Also, regular shafts are hell for people who create a lot of speed and want to hook the ball. I would highly recommend you see a professional clubfitter in your area. Look for someone who has been doing it for a few years.
